One Big Break-Apart Chipper

I was glad to be able to bake again this week. I had stopped for a bit while Covid made its way through my house. I’m happy to say we are all well again and getting on with our summer. This cookie was a big hit. We enjoyed it at a picnic with friends at our Botanical Gardens Concert Series. The only thing to come home were crumbs.

This was a delicious take on a chocolate chip cookie. I loved how easy it was to make as a large cookie, no need to scoop and shape individual cookies. The touch of cinnamon and espresso in this cookie was a perfect addition. I made the dough a couple of days ahead and baked it shortly before leaving for the picnic. It was nice and fresh!

This recipe can be found on page 153 of Baking with Dorie, by Dorie Greenspan.

Cream butter, sugars and salt.

Roll out until its about 1/8” thick.

I wrapped up my awkward shape and refrigerated it for a couple of days before baking.

I had fun drizzling a little chocolate over it for decoration.

World Peace Cookies

World Peace Cookies were a breeze to put together, but a little harder to form into logs. We think they were called world peace, because you had to think peaceful thoughts as you fought with the dough to form logs.

We are so excited to be baking from Dorie Greenspan’s new cookbook, Dorie's Cookies. This week we baked chocolate sandwich cookies. We’re still baking from Baking Chez Moi, but will probably bounce back and forth between the two books depending on the recipes we want to try.
