These cookies were a breeze to make and very yummy. My daughter whipped together the batter while I was making dinner. The dough was so easy to work with. It sat out while we ate dinner and was still a good consistency and easy to scoop onto the cookie sheets. These cookies are light and buttery, with a perfect hint of lemon. They make a great treat and have been holding up well, even after a few days. I'm sure these are going to be a new favorite at our house.
