This week’s recipe for Tuesdays with Dorie is Apple Pandowdy. An Apple Pandowdy is simply a pie with only a top crust, no bottom. As Dorie says, this was probably created to use dough scraps. This time of year I am always looking for apple recipes so I was very excited to try this new recipe. This recipe was a winner on so many levels, it was delicious and a breeze to make. I had all of the ingredients at home except for the apples, which of course were easy to find. I suggest making the dough ahead of time so that it has time to chill, or maybe you have scraps from another bake that can be used.
The filling consisted of apples, sugar, lemon and butter. Simple chop, stir, put in pan, and cover with dough. What could be easier?
This was delicious, a perfect combination of rich flaky crust with sweet, juicy apples. I considered this a healthy dessert because it’s made with fruit, let’s overlook the added butter and ice cream.

First, make the crust and freeze it.
Next, make the filling.
Have fun with the crust on top, but be sure to leave space between the pieces for the juices to bubble over.
Enjoy with a scoop of vanilla ice cream!
