Truth be told I was not going to make these because the recipe said they made 100. And I knew, even if I made half there would still be 50. Then I read everyone’s posts this morning and decided I really wanted to try the recipe. When I reread the recipe I saw I could freeze the dough. So, I chose to just bake a handful and freeze the rest. I’m so glad I did!
These were so easy to make. I had all of the basic ingredients at home and they took less than 15 minutes to prepare. I did not have pearl sugar so I made some cinnamon sugar to sprinkle over them.
Once I put the puffs in the oven, I piped the rest of the dough onto a sheet and prepared to put it in the freezer. I then discovered that I should have measured my sheet pan before I piped all of the puffs, because it did not fit in the freezer and created quite a mess as I tried to find a creative way to make them fit and remove some dough from the sheet. It was quite the mess. I know I’ve put a sheet pan in the freezer before, I must have used a different pan. I’ll know better next time!
Anyway, I am munching on a delicious puff as I type. These taste like little cinnamon sugar cream puffs and are perfect for a bite-sized treat.

Heat water, milk, butter, salt, sugar, and cinnamon.
Bring to a boil.
Add flour and stir like crazy until it comes together.
Add one egg at a time.
Pipe.
Oops, I piped them on a sheet too big to fit in the freezer?!
