This week's recipe for Tuesdays with Dorie is Tiger Cakes. The Tiger Cakes were so simple to prepare and a yummy treat. (A perfect size for a lunchbox treat.)
This recipe called for Almond Flour. They did not have any at the grocery store I went to so I decided to make my own. This was simple, but also the most time consuming part of the recipe. I purchased whole almonds, so I had to blanch them to remove the skin before making them into flour. We dropped them into boiling water for less than a minute, then removed them and let them cool for a couple of minutes before removing the skin. The blanching helped the skin to peel right off. Once we had removed all of the skin we put the nuts in a blender and in seconds we had flour.
All the ingredients for the cakes came together in one bowl that we were able to mix together by hand. Pouring in the melted butter really helped to smooth out the batter and give it a nice shine. We chopped up the chocolate by hand with a knife and gently mixed it into the batter.
We chose to add the ganache to these beautiful little cakes. Because everything is better with more chocolate. We loved the way these turned out. We had a few cakes that stuck to the pan. Next time we will have to grease it better. Overall these were a success.
