This week's recipe for Tuesday's with Dorie is Jam Filled Cookies. We chose to fill ours with Nutella rather than jam because we prefer chocolate to jam at my house. These cookies were not our most successful endeavor. When they came out of the oven we both laughed. My daughter described their taste as "weird." I agreed.
The dough was very difficult to work with. We would cut one or two out and then they would start breaking apart and we'd put the dough back in the fridge and repeat. We did this three or four times and then gave up. The dough called for 1/3 cup of corn starch and we think that was what changed the texture of the cookies. I'm wondering if we used less if the dough would have held together better.
I'm glad we tried this recipe. But I don't think it is one we will try again. If you would like to try this recipe it can be found in Dorie Greenspan's book, Baking Chez Moi.
