This week's recipe for Tuesdays with Dorie was Matcha Financiers. These are little tea cakes flavored with Matcha Tea, intended to make lovely green cakes. We loved the idea of little cakes, but were worried we wouldn't be fans of the green tea flavor. So, we substituted vanilla. We used the recipe as written for the cakes and instead of matcha tea we added 1 tsp. of vanilla at the very end of the recipe.
These turned out to be delicious little bite sized vanilla treats. They were so easy to make, everything mixed together by hand. We baked these in mini cupcake tins rather than financier pans. The recipe called for them to bake at 400 degrees, but we were worried that was too high for our oven. We adjusted the temperature to 375 and baked for 12 minutes. This was perfect, they came out a nice golden brown on the outside and moist in the center.
We had halved the recipe and in the end we had 3 beautiful egg yolks we didn't know what to do with. So we decided to make ice cream to go with these yummy cakes! The sweet ice cream was a perfect combination with these simple little cakes.
