This week we made Glenorchy Flapjacks. Which, in no way are the same as a flapjack here in the US. I would define these as granola bars and bites. Glenorchy is on the South Island of New Zealand and “flapjacks” there are what we consider granola bars here.
These were tasty treats that felt healthy, to spite all the sugar, butter, and syrup, because they were made with whole grain oats.

Prep work was a breeze.
Heat up syrup, sugar, and butter.
Mix dry ingredients. I left out the candied ginger because I didn’t have any.
Heat until even bubbles form. Maybe watch a bit closer. I think I may have let it boil too long.
Mix melted ingredients with dry.
Spread evenly in pan.
Bake. It definitely helped to score these before cutting.
Cut into bars and bites. Enjoy!
