This week I made Cottage Cheese Biscuits. They were a breeze to put together and quite tasty. I have a go-to buttermilk biscuit recipe that I make quite often. There have been times when I wanted to make it and didn’t have buttermilk. This recipe using cottage cheese and would be a great alternative. The biscuit is a little denser than the buttermilk biscuits, but still delicious. We all enjoyed them and I would definitely make these again.
This was also an easy recipe to half if you just wanted to make 4 biscuits. As Dorie mentioned, these are best hot right out of the oven and I didn’t want leftovers so I made half. I still had one left, but thought making a quarter recipe might be tough. The leftover biscuit was still delicious the next day.

This is all you need.
Whisk the dry ingredients.
Whisk the wet ingredients.
Distribute the butter in the flour mixture.
This is the fun part. Blend in the butter with your fingers.
Add the wet ingredients.
Form a ball.
Flatten and cut. As you can see I can’t find my round cutter. So, I have a “Q” from an alphabet set (yes, the “O” is missing). The “Q” works great, I jut rotate it so the tail hangs off.
Arrange on sheet and bake.
